Avocado Coffee: Good Idea or Bad?

Making a creamy iced coffee with plant-based milk can be difficult to match the rich creaminess of dairy.
Hannah Kaminsky, a cookbook author, has a genius solution: avocado iced coffee. It may sound bizarre, but think of bulletproof coffee with butter - is avocado really that different?
This coffee drink is a blend of iced coffee and smoothie, packed with healthy fats from avocado and coconut milk.
For a strong coffee flavor, start with strong brewed coffee like cold brew or dark roast. The healthy fats in the drink may keep you fuller longer than a regular iced coffee - a bonus if you use it for breakfast.
Avocado Iced Coffee
Ingredients Needed
- ½ ripe avocado, peeled and pitted
- ½ cup full-fat coconut milk
- ¼ teaspoon vanilla extract
- 1 to 2 drops liquid stevia (see Note)
- 1 cup strong brewed coffee, cooled
- Ice, to serve
Instructions
- Combine the avocado, milk, vanilla, stevia, and coffee in a blender until smooth.
- Fill one or two glasses with ice, and pour the coffee mixture on top. Enjoy!
Note: You can use your favorite sweetener like maple syrup, coconut sugar, or granulated sugar, to taste.
