Cucumber Salad

  • 1 whole english cucumber
  • 1 tbsp light mayo
  • ½ cup nonfat greek yogurt
  • 1 garlic clove
  • ¼ cup fresh dill
  • ¼ cup red onion
  • 1 tbsp lemon juice
  • 1 pinch of salt
  1. Slice an english cucumber using a mandolin slicer.
  2. Place the cucumber in a large storage container with a lid.
  3. Add minced red onion and garlic to the container, along with the rest of the ingredients.
  4. Close the container and shake until everything is well mixed. Enjoy!
