Cucumber Salad
- 1 whole english cucumber
- 1 tbsp light mayo
- ½ cup nonfat greek yogurt
- 1 garlic clove
- ¼ cup fresh dill
- ¼ cup red onion
- 1 tbsp lemon juice
- 1 pinch of salt
- Slice an english cucumber using a mandolin slicer.
- Place the cucumber in a large storage container with a lid.
- Add minced red onion and garlic to the container, along with the rest of the ingredients.
- Close the container and shake until everything is well mixed. Enjoy!
