No-Bake Raspberry Cheesecake: High Protein Recipe

Cheesecake is a delicious treat, but you can satisfy your sweet tooth with a healthier option! This no-bake cheesecake recipe is protein-packed and macro-friendly.
Michelle Chen (@run2food) to create a vegan cheesecake recipe that's both delicious and high in protein, low in calories. It only takes four ingredients and less than five minutes to make.

Are high-protein desserts beneficial?

Protein is essential for optimal body function. It improves bone health, builds and strengthens muscles, and boosts metabolism. One study even found that eating more protein can lead to healthier eating habits overall.
Michelle's high-protein cheesecake delivers 32 grams of protein from yogurt and vegan protein powder. She uses vanilla plant-based protein powder from Australian supplement company Macro Mike, but you can choose any protein powder you prefer.

Substituting healthy ingredients

Making sugar-free cheesecake? Absolutely! Michelle pulled it off. With no added sugar, the sweetness comes from vanilla protein powder and frozen raspberries. She also suggests adding maple syrup for extra sweetness. Maple syrup has more minerals and antioxidants and a lower glycemic index than white sugar.
This recipe is also lower in fat compared to traditional cheesecake. Instead of cream cheese and butter, both high in fat and calories, it uses dairy-free yogurt for a smooth texture. Michelle uses plain soy yogurt, rich in protein, vitamins, and gut-healthy probiotics. Our dietitians recommend Greek yogurt, which can provide an even higher protein content.

4-Ingredient, No-Bake Raspberry Cheesecake Recipe

Serves: 1

Ingredients:

2 digestive biscuits (can be replaced with a gluten-free biscuit) 1 scoop (40g) vegan vanilla protein powder 125 g dairy-free yogurt 1/4 cup frozen raspberries Optional: 1 tablespoon of maple syrup for sweetness

Instructions:

1. Crush the digestive biscuits and place them at the bottom of a jar. 2. Make the cheesecake filling by blending the vanilla protein powder and yogurt until smooth. Spread evenly over the base. 3. Melt the frozen raspberries in the microwave. Optional: Add 1 tablespoon of maple syrup for sweetness. 4. Spread the raspberries over the cheesecake layer. 5. Enjoy!
